Pagnotta di Santa Chiara

Anticamente la festa di Santa Chiara veniva celebrata a Napoli con la preparazione di una sorta di pizza detta, in onore della Santa, "pagnotta di Santa Chiara". La pagnotta è una sorta di fagottino preparato con farina, patate schiacciate, lievito, strutto e pepe impastati a mano che deve lievitare per circa due ore. A parte si cuociono i pomodori e le alici che servono per la farcitura insieme ad origano e prezzemolo. I fagottini, cotti in forno a legna, anticamente erano molto diffusi in tutte le case, oggi la loro preparazione casalinga è caduta abbastanza in disuso, ma si possono trovare in vendita nelle tipiche friggitorie del centro storico di Napoli.

During the celebrations for Santa Chiara in Naples, a kind of pizza called "pagnotta di Santa Chiara" is made to honour the saint. A small folded pizza made of flour, mashed potatoes, yeast, lard and pepper is kneaded together by hand and left to rise for about 2 hours. Tomatoes and sardines are cooked separately together with oregano and parsley and are used for the stuffing. Cooked in the open wood fire ovens, this pizza used to be made at home but now they can be found also in the typical fried food shops of Naples's historical center.
